Gone Baby Gone Banana Bread

This delicious, healthy bread uses those unapeeling bananas.  It disappears in hours at our house.

3-4 mashed ripe bananas

1/2 stick melted butter (do not use margarine or oil)

1 large egg

3/4 c white sugar

1 1/2 cup all-purpose flour

1/4 t salt

1 t baking soda

1 t vanilla

1/4 cup mini semi-sweet chocolate morsels (optional)

Preheat oven to 350 degrees.

Spray a glass loaf pan with nonstick spray.  Mash bananas.  Add butter, eggs and salt.  Mix well.  In a small bowl, combine flour, baking soda and salt.  Add dry ingredients to banana mixture.  Add vanilla.  Fold in chips if using.

Pour into prepared pan and bake at 350 degrees for 50-60 minutes.
