Emily’s Wholesome Bran Muffins

Ingredients 

  • 1 ½ c All Bran Cereal
  • 1 ¼ c Whole Wheat Flour (I like King Arthur’s)
  • 1/3 c Splenda for baking (Can also use White Sugar)
  • 1 T Baking Powder
  • ¼ t Salt
  • 1 ¼ c Fat Free Milk
  • 2 Egg Whites
  • ¼ c Vegetable Oil (I use Safflower Oil)
  • ½ Mashed Ripe Banana
  • ¼ c Frozen Blueberries (not defrosted)

Directions 

1.      Mix milk, egg whites, and oil.  Add cereal and let soak about 5 minutes, or until softened.

2.      In a separate bowl, mix flour, Splenda, baking powder and salt.

3.      Combine dry ingredients with the wet ones, mixing by hand until just blended.

4.      Fold in mashed bananas and frozen blueberries.

5.      Ladle into 12 muffin cups sprayed with Pam.

6.      Sprinkle the top of each muffin with flax meal.

7.      Bake at 350 on the middle shelf of the oven, for 20-25 minutes or until the top springs back.

8.      Cool completely, and then serve or freeze in individual Ziplocs.

Yields about 12 muffins, each contains about 100 calories.
